A few points for consideration as regards the following aspect:
1. Controlling the depth of view of the point of interest being shot by stacking
You may use Zerene Stacker for the purpose. The link is: http://zerenesystems.com/cms/stacker.
You can download the software for practice but it will expire in 30 days.
The following is a shot for reference:

In this shot, my purpose is to capture the full details on the flower in question while keeping the flowers at the vicinity and the background out of focus.
I use a very large aperture, probably f5.6, to keep the bokeh as soft as possible. The lens is a Macro 200mm. One of the physical properties of a wide-open telephoto macro lens is the short depth of view of the image it produces, so the present quality of the shot is physically impossible in the absence of suitable stacking provided by the stacking device in software.
The software I have used for the above shot is Zerene Stacker.
Probably, what Vincecharus mentioned, i.e. DofF Bracketing, is something that can produce similar outcomes as mine.
